Finally, we made the rums in the French Style. This also has a
history in the former French Colonies such as Haiti and Martinique.
These rums are also referred to as Rhum and are not made from molasses,
but from sugar cane juice. There are strict French guidelines for these
rums and they are distilled using column distillation.
The Rhums that meet the strict requirements are called Rhum Agricole's.
The rums that do not meet these guidelines are called Rhum Industriel.
The French style rums are more fruity in the aromas and have a drier mouthfeel.

Dark, concentrated, flamboyant: it betrays its long maturation at the tropics in Cognac casks, followed by a continental finish of 42 months in refill Oloroso.
Until the beginning of the 2000’s, Mauritian law dating back from the British colonial era enforced distillers to distil at high abv, above 93 %.
